diz: Most decently stocked grocery stores will have either 'high-gluten flour' or 'bread flour' on the shelves. 'Bread flour' is usually how it seems to be sold where I am.

Where does one find this 'high gluten flour'?

Is it labeled as such or do you just have to inspect the gluten level of the flour via the back panel or something?

I miss true east coast 'new york style?' crust.

Thanks.

Great job on the tossing! I sort of skipped that step :)
Fun idea on the pears: I've used plums and granny smith apples in the past. They all go so well with cheese!
