Hi all!

To those who asked about soy vs cream/milk in ice cream, I've found that using only soy means you get a less rich, more 'icy' ice cream. It isn't as creamy and if you've stored it in the freezer, it tends to need to sit at room temperature for about 10 minutes before serving so it can soften up. Fresh out of the ice cream machine, though, and it's nice and soft.

Freezing it, however, is the same as with any other ice cream.

YUMM.. love the flavour combination of coffee and chocolate. Never made soy ice cream before. Do you need to treat it differently to normal one? My brother is lactose intolerant, so soy ice cream should be ok for him. I might make it for him sometime. Thanks for the inspiration. Your cakes looked amazing =)

Thanks so much for the soy ice cream recipe. Sometimes I could use another alternative for dessert and I have no problems whatsoever with soy :)

Mmm chocolate is right, and your Valentino looks MMMM. Also, I've never tried soy milk, but your ice cream recipe makes me very likely to do so.
